Classes
Class Policy:
* Class fees must be paid at least 2 weeks prior to class
* Class fees must be paid in person by cash/cheque or online via Paypal
* NSF cheques will be subject to a $40. service fee
* All deposits and fees are forfeited for no-shows
* Students will be sent a list of required supplies by e-mail at least 1 week prior to class
Cancellation Policies:
* Morsels by Mark reserves the right to cancel any class due to low enrollment, at which
point all deposits/fees will be returned
* If a student cancels within 2 weeks of class, fees will be returned less a $50 administration
fee
* Registration fees are non-transferrable
* Cameras are allowed in class, however please check with each instructor prior to use. Video
is not permitted during class. For the consideration of the instructor and other students, we
ask that you refrain from posting step-by-step in progress pictures of our classes & the
material covered
* Classes will begin on time, so please be sure to allow enough time to arrive and prepare
prior to the start of the class. Every attempt will be made to keep the class running
smoothly and on time, however some classes may run over, so please plan accordingly.

Celebrity Class - Lorrie Gauthier teaches Mike McCarey's Modelling Chocolate Dragon. Saturday March 31st, Chateauguay Quebec, 9am-5pm
Learn how to emboss with lace, marble, dust, colour, use impression mats and make 3D elements like flowers using cutters and modelling tools. Then use your new knowledge and make the Amazing Dragon to put on your cake. Make him your own by personalizing him. (or her!) We will also roll out the chocolate and make a free-standing wrap to go around the diameter. Recipes are included and there will be a demo on how to make and colour chocolate at home. We'll be using Guittard chocolate in this class.
Take home a fondant covered Styrofoam cake with your dragon on top and your other technique samples on a small square Styrofoam box.

You will learn how to use silicone molds to finish your design as well as learn how to make an elegant stenciled flower! Lunch is included, and each student goes home with a finished 2 tiered cake. Students should have a basic understanding of how to cover cakes in fondant. All tools provided for use in class. Students should bring a box to fit a 12 inch cake drum.
